The estate

he Patrick Miolane estate produces a range of fourteen appellations: red and white Bourgogne and Saint-Aubin villages and premiers crus; red and white Chassagne village; white Puligny village. It also stocks some old vintages, which you will have opportunity to discover on the open days organised in November.

Characteristics

Grape variety: Pinot noir

Vinification and ageing
The grapes are harvested manually into wooden creates. They are sorted on a vibrating table to eliminate any dry berries, leaf debris, stalks, etc, then pass on to another sorting line for the removal of any grapes that are unripe or in any way unhealthy. The sound grapes are pressed to facilitate the extraction of colour and flavours. The stems are removed at this stage to reduce the astringency of the future wine. The must is vinified in wooden vats.
Fermentation is begun slowly, using native yeasts, and continues for between 10 and 15 days.
The wine is then aged in oak barrels for three years.

Tasting notes
This wine is an intense purple colour. The nose exhibits attractive red fruit aromas.
The attack is slightly acidic, with a lingering fruity flavour, while the tannins, though in evidence, are unobtrusive. This is an easy-drinking, full-flavoured Burgundy, combining depth and elegance.

Food and wine pairing
Ideal with roast veal or grilled meats

Serving temperature
Between 14 and 16°C.
