The estate

he Patrick Miolane estate produces a range of fourteen appellations: red and white Bourgogne and Saint-Aubin villages and premiers crus; red and white Chassagne village; white Puligny village. It also stocks some old vintages, which you will have opportunity to discover on the open days organised in November.

Saint-Aubin 1er Cru

Characteristics

Soil type: Clayey-limestone
Location: This wine is made from grapes grown on two premier cru plots: Les Castets and Les Frionnes, both close to the village, on the south-east facing slope.
Age of vines: Castets planted in 1970; Frionnes planted in 1997
Grape variety: Pinot noir

Vinification and ageing
After harvesting by hand, the grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table for the removal of any grapes that are unripe, damaged or showing signs of rot. The sound grapes are pressed to facilitate the extraction of colour and flavours.  Before passing on to the vat, the grapes are stemmed: the removal of the stalks reduces the astringency of the future wine.
Fermentation is begun slowly, using native yeasts, and continues for between 15 and 20 days. All the wine is then aged in barrels for a lengthy period of three years.

Keeping properties
Up to five or seven years.

Tasting notes
This wine is a deep, intense red in colour. The nose is pleasantly intense, featuring berry fruit aromas, in particular blackcurrant. The wine is stylish, very fruity with mineral overtones, of great purity with a fine rounded texture.

An excellent accompaniment to tender red meat
