The estate

he Patrick Miolane estate produces a range of fourteen appellations: red and white Bourgogne and Saint-Aubin villages and premiers crus; red and white Chassagne village; white Puligny village. It also stocks some old vintages, which you will have opportunity to discover on the open days organised in November.

Vinification and ageing
After harvesting by hand, the grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table, for removal of any grapes that are unripe, damaged or unhealthy in any way. The grapes are then pressed lightly to avoid any risk of oxidisation. Fermentation is begun slowly and naturally, using native yeasts. To retain the freshness of the aligoté grape, the wine is aged in the vat for just 12 months.

Best drunk young and fresh.

Tasting notes
Bourgogne aligoté is pale yellow in colour with brilliant green highlights.
The wine has citrus and exotic fruit flavours, with a pleasing balance of acidity and mellowness.

Food and wine pairing
This Bourgogne aligoté is the perfect accompaniment to oysters, a platter of seafood or charcuterie (cooked pork meats).

Serving temperature
Between 9 and 12°C.
