The estate

he Patrick Miolane estate produces a range of fourteen appellations: red and white Bourgogne and Saint-Aubin villages and premiers crus; red and white Chassagne village; white Puligny village. It also stocks some old vintages, which you will have opportunity to discover on the open days organised in November.

Soil type: clayey-limestone
Location: The plot is to the rear of the estate and faces south-east.
Age of vines: planted in 1986
Grape variety: Chardonnay

Vinification and ageing
After harvesting by hand, the grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table for the removal of any grapes that are unripe, damaged or showing signs of rot. Fermentation is begun slowly, using native yeasts. The wine is then aged in oak barrels for 12 months.

Tasting notes
The wine is a luminous light yellow in colour, with golden highlights. The nose has a pleasing, intense fragrance, exhibiting a complex range of aromas, in particular the white floral and toasty notes characteristic of the Chardonnay grape.
The wine is well-rounded on the palate, with white fruit flavours and mineral overtones, and has a fresh fruity, lingering finish.

Keeping properties
Pleasant drinking in the first two years, but best if laid down for seven to ten.

Food and wine pairing
A good match for sushi, scallop quiche or any fish with firm flesh.

Serving temperature
Between 12 and 14°C.
