The estate

he Patrick Miolane estate produces a range of fourteen appellations: red and white Bourgogne and Saint-Aubin villages and premiers crus; red and white Chassagne village; white Puligny village. It also stocks some old vintages, which you will have opportunity to discover on the open days organised in November.

Characteristics

Soil type: pebbly limestone
Location:south-east facing, this plot lies behind Les Perrières, halfway up the hillside
Age of vines: planted in 2006
Grape variety: Chardonnay

Vinification and ageing
After harvesting by hand, the grapes are sorted on a vibrating table to remove dry berries, leaf debris and stalks. They then pass to another sorting table for the removal of any grapes that are unripe, damaged or showing signs of rot.
The grapes are lightly pressed to avoid the risk of oxidisation. Fermentation is begun slowly and naturally, using native yeasts.
This wine is aged entirely in the vat for twelve months to conserve the fresh fruitiness and vivacity abundantly present in the grapes from this young vineyard.

Keeping properties
Best drunk while young and stylish. Will keep for up to five years.

Tasting notes
A brilliant pale yellow in colour, with green highlights. Acacia blossom and mineral overtones are evident in the bouquet. The vineyard produces a lively young wine, its elegance and mineral quality giving a sense of freshness. It has a complex and lingering finish.

Food and wine pairing
The wine’s fresh, mineral quality goes particularly well with pikeperch on a bed of sorrel.

Serving temperature
Between 12 and 14°C.
